How can I create new levels and new maps?

Start a new game project file and publish it as a child to the main game, linking the two with a portal object or mechanic of some sort.

Can't create multiple levels in one game project?

You can create multiple areas on the same map and segregate them from one another, but there is currently only one map or zone per project and you can only have one terrain object with collision.
